About Tabbouleh

Tabbouleh is a fresh, cold salad from the Levant, made mostly of finely chopped parsley with tomatoes, mint, onion and a little soaked bulgur wheat. It is dressed simply with olive oil, lemon juice and salt.

In Lebanon and Syria, parsley is the star and bulgur is only a small part of the mix, so the salad looks bright green. In Turkish kısır and Armenian eetch, bulgur is the main ingredient instead.

The salad comes from Lebanon and Syria and is a classic part of a mezze spread, often scooped up with lettuce leaves or bread. Lebanon celebrates National Tabbouleh Day on the first Saturday of July.
