About Feijoada
Feijoada is Brazil's national dish: a rich, smoky stew of black beans cooked slowly with a variety of pork and beef cuts, including sausages, bacon, ribs and dried beef.
The beans and meat are simmered for hours with garlic, onions and bay leaves until the sauce is thick and dark. Traditionally, cheaper cuts such as ears, feet and tails were also used.
Feijoada is served with white rice, sautéed collard greens (couve), farofa (toasted cassava flour) and orange slices. In Brazil it is traditionally eaten on Wednesdays and Saturdays as a long, leisurely lunch, often with a caipirinha.
