About Ossobuco
Ossobuco is a Milanese dish of veal shanks slowly braised with white wine, broth and vegetables until the meat is very tender. The name means "bone with a hole", referring to the marrow bone in the middle.
The bone marrow is a prized part of the dish. The classic Milanese version is finished with gremolata, a fresh mix of lemon zest, garlic and parsley.
Ossobuco is traditionally served with risotto alla milanese, a creamy saffron risotto. Many modern versions include tomatoes.
