About Polenta

Polenta is an Italian dish of cornmeal cooked slowly in water and stirred until thick and creamy. It is a staple of northern Italian cooking.

It can be served soft, with butter and Parmesan cheese, or left to set, cut into slices and grilled or fried. It is served with stews, mushrooms, sausages or cheese.

Before corn arrived from the Americas, polenta was made with other grains like spelt and chestnuts. Corn polenta was a staple food for the poor in northern Italy.
