About Chicken Parmigiana

Chicken Parmigiana is a breaded chicken cutlet, fried until crisp, then topped with tomato sauce and melted mozzarella and Parmesan and baked or grilled until bubbling. It is a hearty, cheesy comfort dish.

It is based on the southern Italian melanzane alla parmigiana, layered fried eggplant with tomato and cheese. Italian immigrants in the United States began making it with chicken or veal, and Chicken Parmigiana became an Italian-American classic.

In the US it is often served with spaghetti or in a sandwich roll, while in Australia the "parmi" or "parma" is a pub favorite, served with chips and salad. It is rarely found on menus in Italy itself.
