About Nasi Goreng
Nasi Goreng, meaning "fried rice", is Indonesia's national dish: cooked rice stir-fried with shallots, garlic, chili and sweet soy sauce (kecap manis), which gives it a dark color and a sweet, smoky flavor.
Terasi, a fermented shrimp paste, adds depth and umami. Chicken, shrimp or other meat are often included, and it is traditionally made with leftover rice from the day before.
It is usually topped with a fried egg and served with prawn crackers (krupuk), cucumber, tomato and crispy fried shallots. Nasi Goreng is eaten at any time of day, from breakfast to late-night street food, and is also popular in Malaysia, Singapore and the Netherlands.
