Martabak Manis
Indonesia
Also known as Terang Bulan, Sweet Martabak
About Martabak Manis
Martabak Manis is a thick, sweet Indonesian pancake cooked in a deep round pan and loaded with fillings, then folded in half and cut into pieces. It is one of Indonesia's most popular evening street foods.
The batter is cooked until it rises and its surface fills with bubbles, giving it a spongy, honeycomb texture. While it is still hot, it is brushed generously with butter and sprinkled with sugar and toppings such as chocolate sprinkles, grated cheese, crushed peanuts, condensed milk or a mix of all of them.
It is also known as terang bulan, meaning "bright moon", for its round shape. Martabak stalls open in the evening across Indonesian cities, and the sweet pancake is often shared with friends and family.
