About Rendang
Rendang is a rich, dry curry of beef slowly cooked in coconut milk and a paste of spices until the liquid is almost gone and the meat is dark, tender and deeply flavored. It comes from the Minangkabau people of West Sumatra, Indonesia.
The spice paste includes chilies, lemongrass, galangal, ginger, turmeric, garlic and shallots. The meat cooks for hours, absorbing the spices as the coconut milk reduces and caramelizes.
Rendang was originally a way to preserve meat for weeks. It is served at ceremonies and festivals such as Eid, and has often been voted one of the most delicious foods in the world. It is also popular in Malaysia and Singapore.
