About Ayam Goreng

Ayam Goreng means "fried chicken" in Indonesian and Malay. Unlike Western fried chicken, the chicken is first simmered in a fragrant spice paste and then fried, so the flavor goes all the way through the meat.

The paste usually includes shallots, garlic, turmeric, coriander, galangal, lemongrass and candlenuts, and bay leaves (salam). The chicken is cooked in this mix until the liquid is absorbed, then deep-fried until golden and crisp.

There are many regional versions, such as Yogyakarta's sweet ayam goreng and kremes, topped with crunchy fried spice crumbs. It is served with rice, sambal chili sauce and fresh vegetables, and is sold everywhere from street stalls to restaurants.
