About Mole

Mole is a rich, complex Mexican sauce made from dried chilies, nuts, seeds, spices and often chocolate, usually served over chicken or turkey. The word comes from the Nahuatl word mōlli, meaning sauce.

The famous mole poblano from Puebla can contain more than 20 ingredients, including several types of dried chili, almonds, sesame seeds, raisins, tomatoes, cinnamon, cloves and a little chocolate. They are toasted, ground and slowly simmered into a thick, dark sauce that is spicy, slightly sweet and deeply savory.

Oaxaca is known as "the land of seven moles", each with its own color and flavor. Mole is served at weddings, birthdays and festivals like Day of the Dead, with rice and tortillas, and is sprinkled with sesame seeds.
