About Romeritos
Romeritos is a traditional Mexican Christmas dish of tender sprigs of seepweed (romeritos), a wild green, cooked in a dark mole sauce with potatoes, nopales (cactus paddles) and patties made from dried shrimp.
Romeritos look a bit like rosemary but taste mild and slightly salty, like a cross between spinach and samphire. The shrimp patties are made from ground dried shrimp mixed with egg and fried before being added to the mole.
The dish is served especially on Christmas Eve and during Lent in central Mexico, when many families avoid meat. It combines pre-Hispanic ingredients like romeritos and cactus with mole, one of Mexico's most important sauces.
