About Huevos Rancheros

Huevos Rancheros is a classic Mexican breakfast of fried eggs served on lightly fried corn tortillas and covered with a warm tomato and chili salsa. The name means "ranch-style eggs".

It started as a hearty mid-morning meal for farm workers in rural Mexico. The salsa roja is made from tomatoes, chilies, onion and garlic.

It is usually served with refried beans, rice, avocado slices and fresh cilantro, sometimes with crumbled queso fresco. It is also popular in Tex-Mex cooking in the United States.
