About Matoke

Matoke is a staple dish of Uganda made from green cooking bananas, called matooke. The bananas are peeled and steamed or boiled, then mashed or stewed with onions, tomatoes and spices.

In the traditional Ugandan way, the peeled bananas are wrapped in banana leaves and steamed for hours, then mashed into a soft yellow mash. It is also often cooked as a stew with beef, groundnuts (peanuts) or beans.

Uganda is one of the world's biggest consumers of bananas, and matooke is eaten almost daily in many homes, especially in the central and western regions. It is served with groundnut sauce, beans or meat stew.
