About Anzac Biscuits
Anzac Biscuits are sweet, chewy oat cookies from Australia and New Zealand, made with rolled oats, flour, sugar, butter, golden syrup and desiccated coconut. They contain no eggs.
They are named after the ANZAC (Australian and New Zealand Army Corps) of the First World War. Tradition says they were sent to soldiers abroad because they kept well on long sea journeys, though the recipe as we know it became popular at home for fundraising.
The word "Anzac" is protected by law in both countries, and the biscuits may not be sold as "cookies". They are especially popular around Anzac Day on 25 April, when the soldiers are remembered.
