About Mofongo
Mofongo is a Puerto Rican dish of fried green plantains mashed with garlic, olive oil and crispy pork cracklings (chicharrón) in a wooden mortar called a pilón.
The mash is formed into a dome or ball and often served with broth, or stuffed with shrimp, chicken or beef in a sauce (mofongo relleno).
Mofongo has its roots in West African fufu, brought to the Caribbean by enslaved Africans. It is also popular in the Dominican Republic and Cuba.
