About Key Lime Pie
Key Lime Pie is a tangy American dessert from the Florida Keys, made with a filling of Key lime juice, egg yolks and sweetened condensed milk in a graham cracker or pastry crust, topped with whipped cream or meringue.
Key limes are smaller, more aromatic and more acidic than common limes. When their juice is mixed with condensed milk and egg yolks, the acid thickens the filling, so traditionally it needed little or no baking.
The pie likely dates to the late 19th century, when condensed milk was useful in the Keys because there was little fresh milk or refrigeration. It is the official state pie of Florida, and the filling should be pale yellow, not green.
