About Macarons
Macarons are delicate French cookies made from almond flour, sugar and egg whites. Two smooth, round shells are sandwiched together with ganache, buttercream or jam.
A good macaron has a smooth top, a crisp shell, a chewy inside and a ruffled base called the "foot". They come in many colors and flavors, like raspberry, pistachio, chocolate and salted caramel.
The modern sandwich macaron became popular in Paris in the 20th century, especially at the famous pâtisserie Ladurée. They are a popular gift and a symbol of French pastry.
