About Galette
Galette is a French name for flat, round cakes and pastries. Two famous examples are the savory buckwheat crêpes of Brittany and the rustic, free-form tarts made with fruit or vegetables.
Breton galettes are made from buckwheat flour, water and salt, and are filled with ham, cheese and egg (galette complète). Rustic galettes are made by folding the edges of a sheet of buttery pastry over the filling.
In January, the French also eat the galette des rois, a puff pastry cake filled with almond cream, for Epiphany. A small charm (fève) is hidden inside, and whoever finds it becomes king or queen for the day.
