About Madeleine
Madeleines are small French sponge cakes baked in shell-shaped molds. They are buttery and light, with a crisp edge and a characteristic bump on top.
The batter is made from eggs, sugar, flour and melted butter, flavored with lemon zest or vanilla. Chilling the batter before baking helps create the bump.
Madeleines come from the town of Commercy in Lorraine. They became famous in literature through Marcel Proust's novel In Search of Lost Time, where the taste of a madeleine dipped in tea brings back childhood memories.
