Ratatouille, a dish from France

Also known as Ratatouille Niçoise

About Ratatouille

Ratatouille is a Provençal vegetable stew from Nice in southern France, made with tomatoes, zucchini, eggplant, bell peppers, onions and garlic, cooked slowly in olive oil with herbs like thyme and basil.

Traditionally, each vegetable is cooked separately before being combined, so each one keeps its own flavor and texture. A layered version with thin slices of vegetables arranged in rows became famous through the 2007 Pixar film Ratatouille.

Ratatouille is a summer dish, made when vegetables are at their best. It is served hot or cold, as a side dish or main course with bread, rice or pasta, and it often tastes even better the next day.
