About Khinkali
Khinkali are large Georgian dumplings filled with spiced minced meat and broth. The dough is pleated into a twisted knot at the top, which is used as a handle.
The filling of beef and pork is seasoned with onion, cilantro, cumin and chili, and water is added so the meat releases a hot, juicy broth while it boils.
Khinkali come from the mountain regions of Georgia. They are eaten by hand: you bite a small hole, sip the broth, then eat the rest, leaving the knot on the plate. They are seasoned with black pepper.
