About Khachapuri

Khachapuri is Georgia's beloved cheese bread, a soft leavened dough filled with melted cheese. It is the country's most popular dish and appears at nearly every Georgian meal.

The best-known version abroad is Adjaruli khachapuri from the Black Sea coast, shaped like a boat and filled with cheese, then topped with a raw egg and a pat of butter just out of the oven. Diners stir the egg and butter into the hot cheese and tear off pieces of the crust to dip in.

There are many regional versions. Imeruli is a round, flat bread with cheese inside, and Megruli has an extra layer of cheese on top. Georgians traditionally use local brined cheeses like sulguni and imeruli.
