Also known as Jilebi, Zulbia, Zalabia

About Jalebi

Jalebi is a bright orange, spiral-shaped Indian sweet made by piping a fermented batter of flour and yogurt into hot oil, frying it until crisp, then soaking it in saffron and cardamom sugar syrup.

It is crunchy on the outside and juicy and syrupy inside. Jalebis are best eaten hot, straight from the syrup.

The sweet came to India from the Middle East, where it is known as zalabia. In India it is eaten at festivals such as Diwali and Independence Day, and for breakfast with rabri or milk, as well as with poha in Indore.
