About Pav Bhaji
Pav Bhaji is a famous street food from Mumbai: a spicy, buttery mash of vegetables (bhaji) served with soft bread rolls (pav) toasted in butter on a griddle.
The vegetables, usually potatoes, tomatoes, peas, cauliflower and peppers, are boiled and then mashed on a large flat griddle with butter, onions and a special pav bhaji spice mix. It is cooked until thick and topped with more butter.
Pav bhaji started as a fast, cheap lunch for Mumbai's textile mill workers. Today it is served at stalls across the city, especially at Juhu Beach, with chopped onion, coriander and a squeeze of lemon.
