About Fish Tacos
Fish Tacos are soft corn or flour tortillas filled with fried or grilled white fish and topped with crunchy shredded cabbage, a creamy sauce and a squeeze of lime. The best-known style comes from Baja California in north-west Mexico.
In the Baja style, strips of fish are dipped in a light batter and fried until crisp, then served with cabbage, pico de gallo, a sauce of crema or mayonnaise, and salsa. Towns such as Ensenada and San Felipe on the Baja coast are famous for their fish taco stands.
Fish tacos became hugely popular in California in the 1980s and are now found across the United States. Grilled versions with spiced fish are a lighter alternative, and cilantro, onion and hot sauce are common toppings.
