About Birria
Birria is a Mexican stew of goat or beef slowly cooked in a rich, spicy sauce of dried chilies, garlic and spices. It comes from the state of Jalisco and is especially popular in Guadalajara.
The meat is marinated in a paste of guajillo and ancho chilies, vinegar, cumin, oregano, thyme, cinnamon and cloves, then cooked slowly for hours until very tender. Traditionally it was roasted in a pit oven.
Birria is served as a stew with its broth (consomé) or in tacos. Quesabirria tacos, filled with meat and cheese, dipped in the red consomé and fried, became a social media hit in the United States in the 2010s.
