About Cochinita Pibil
Cochinita Pibil is a slow-roasted pork dish from Mexico's Yucatán Peninsula. Pork is marinated in a bright orange paste of achiote (annatto seeds) and bitter orange juice, wrapped in banana leaves and cooked slowly until tender.
"Pibil" comes from the Mayan word for a pit oven, in which the meat was traditionally buried with hot stones. "Cochinita" means suckling pig.
The meat is shredded and served in tacos or tortas with pickled red onions and fiery habanero salsa. It is a classic of Yucatecan cooking and a popular weekend breakfast in Mérida.
