About Chimichurri

Chimichurri is a sharp, herby green sauce from Argentina and Uruguay, made with finely chopped parsley, garlic, oregano, vinegar and oil, plus a pinch of dried chili flakes. It is uncooked and has a bright, tangy flavor.

It is the classic sauce for asado, the Argentine barbecue, spooned over grilled steak, sausages and other meats. Its acidity cuts through the richness of the meat.

There are many theories about its name, including one connected with Basque immigrants, but no one knows for sure. A red version includes paprika and tomato or red pepper. Chimichurri is also used as a marinade and is often made a day ahead so the flavors can blend.
