About Fabada Asturiana
Fabada Asturiana is a rich bean stew from Asturias in northern Spain. Large, creamy white beans called fabes are slowly cooked with chorizo, morcilla (blood sausage), pork shoulder and pork belly.
The meats are known as compango. Saffron and paprika color the broth, and the beans are cooked very slowly so they become soft but keep their shape.
Fabada is a hearty winter dish, usually eaten at lunch and followed by a nap. It is served with crusty bread and Asturian cider.
