About Sabudana Khichdi
Sabudana Khichdi is an Indian dish of soaked tapioca pearls (sabudana) stir-fried with roasted peanuts, potatoes, green chilies, cumin seeds and curry leaves. It is especially popular in Maharashtra.
The tapioca pearls are soaked so they soften but stay separate, then cooked briefly so they become translucent and chewy. Crushed peanuts add crunch and richness, and lemon juice and fresh coriander finish the dish.
It is a popular food during Hindu fasting days like Navratri, when grains such as rice and wheat are avoided. It is also eaten as a light breakfast or snack, often with yogurt.
