About Chole Bhature
Chole Bhature is a hearty North Indian meal of spicy chickpea curry (chole) served with bhature, large puffed fried breads. It is one of the most popular breakfast and brunch dishes in Delhi and Punjab.
The chickpeas are soaked overnight and cooked with onions, tomatoes, ginger, garlic and a dark, tangy spice blend called chole masala. Tea leaves or dried amla are sometimes added during cooking to give the curry its deep brown color.
The bhature are made from a soft, slightly fermented dough of flour and yogurt, rolled out and deep-fried until they balloon. The meal is served with pickled onions, green chilies and pickle, and often a glass of lassi.
