About Risotto

Risotto is a creamy northern Italian rice dish, made by slowly cooking short-grain rice such as Arborio or Carnaroli in broth, adding it a ladle at a time and stirring until the rice releases its starch.

It starts by frying onion in butter, then toasting the rice before adding white wine and hot broth. Butter and Parmesan cheese are stirred in at the end to make it creamy, a step called mantecatura.

A perfect risotto should flow on the plate in a wave (all'onda). Risotto alla milanese is colored golden with saffron, and other popular versions include mushroom, seafood and asparagus.
