Lasagne
Italy
Also known as Lasagna, Lasagne alla Bolognese
About Lasagne
Lasagne is a baked Italian dish of wide, flat pasta sheets layered with a rich meat sauce and cheese. In its classic form from Bologna, layers of fresh egg pasta alternate with ragù alla bolognese and béchamel sauce, finished with Parmesan.
The ragù is cooked slowly with minced meat, onion, carrot, celery, wine and tomato. In southern Italy, lasagne is often made with ricotta, mozzarella and small meatballs, and the Italian-American version usually includes ricotta and mozzarella.
Lasagne is one of the oldest pasta forms, and it is a classic dish for Sunday lunches, holidays and family gatherings. Baking it brown and bubbling makes the top layer slightly crisp.
