About Cannoli
Cannoli are crisp, fried pastry tubes filled with sweet, creamy ricotta cheese. They are one of the best-known desserts of Sicily.
The shells are made from a dough that often includes wine or Marsala, wrapped around metal tubes and fried until bubbly and crisp. The filling of sheep's milk ricotta is sweetened and mixed with candied orange peel or chocolate chips.
The cannoli are filled just before serving so the shell stays crunchy, and the ends are often dipped in pistachios or candied fruit. They were originally made for Carnival in Palermo and are now eaten all year.
