About Profiteroles
Profiteroles are small, round puffs of choux pastry filled with whipped cream, pastry cream or ice cream and covered with warm chocolate sauce. They are a classic French dessert.
Choux pastry puffs up in the oven because of the steam inside, leaving a hollow center ready to be filled. The crisp shells and cold, creamy filling make a nice contrast with the warm, glossy chocolate sauce.
Profiteroles are often served piled on a plate. A tall cone of cream puffs held together with caramel, called croquembouche, is a traditional French wedding cake.
