About Pâté en Croûte
Pâté en Croûte is a French terrine of seasoned meat baked inside a pastry crust and served cold in slices. It is one of the jewels of French charcuterie.
The filling is a mix of minced pork and veal, often with pieces of duck, foie gras, pistachios and cognac. After baking, the gap between the meat and the crust is filled with savory jelly (aspic) through small holes in the top.
Each slice shows a mosaic of pink meat, green pistachios and golden crust. Pâté en croûte is traditionally served on festive occasions, and there is even an annual world championship for it in France.
