About Poutine
Poutine is a Canadian dish from Quebec made of French fries topped with fresh cheese curds and covered in hot brown gravy.
The curds must be fresh so they "squeak" when you eat them. The hot gravy softens them slightly without fully melting them.
Poutine was created in rural Quebec in the 1950s, with several towns claiming to have invented it. Today it is popular across Canada, with toppings like pulled pork and bacon.
