About Fricase de Pollo
Fricasé de Pollo is a Cuban chicken stew of chicken pieces simmered in a tomato sauce with potatoes, green olives, onions, peppers and garlic.
The chicken is marinated in a sour orange or lime juice mixture with garlic, cumin and oregano, called mojo, then browned and simmered slowly with white wine, raisins and capers. The sauce is rich and slightly sweet and sour.
The dish shows the Spanish influence on Cuban cooking. It is a classic Sunday family meal, served with white rice, black beans and fried sweet plantains.
