About Pork Adobo

Pork Adobo is one of the most famous dishes of the Philippines and is often called the country's unofficial national dish. Pork is simmered in vinegar, soy sauce, garlic, bay leaves and black peppercorns until tender and full of flavor.

Cooking in vinegar was a way of preserving meat in the tropical climate long before Spanish colonization, but the Spanish gave it the name adobo, meaning marinade. Soy sauce was added later through Chinese influence.

Every Filipino family has its own adobo recipe. Some add coconut milk, sugar or potatoes, and some fry the meat after simmering until it is browned. It is served with plenty of steamed rice and tastes even better the next day.
