About Kare-Kare
Kare-Kare is a rich Filipino stew of oxtail, tripe and vegetables in a thick, savory peanut sauce. It is a festive dish served at family celebrations.
The meat is simmered until tender, and the sauce is made with ground roasted peanuts or peanut butter and toasted rice, and colored orange with annatto. Vegetables like string beans, eggplant, bok choy and banana blossom are added.
The sauce is mild, so kare-kare is always served with bagoong, a salty fermented shrimp paste, on the side. It is eaten with lots of rice.
