About Bibingka
Bibingka is a soft Filipino rice cake made from rice flour, coconut milk, eggs and sugar, traditionally baked in a clay pot lined with banana leaves, with hot coals placed both under and on top of it.
The banana leaves give the cake a smoky, fragrant aroma. It is topped with slices of salted duck egg and kesong puti (white cheese), brushed with butter and sprinkled with sugar and grated coconut.
Bibingka is especially linked to Christmas in the Philippines. Vendors sell it outside churches during Simbang Gabi, the series of dawn masses before Christmas, often with puto bumbong, a purple sticky rice cake.
