About Porchetta

Porchetta is an Italian roast pork made from a boneless pig, or a pork belly wrapped around the loin, seasoned with garlic, rosemary, wild fennel and black pepper, rolled tightly and roasted slowly until the skin is crisp.

The meat stays juicy and fragrant with herbs, while the skin turns into crunchy crackling. It is traditionally cooked in a wood-fired oven for many hours.

Porchetta is a specialty of central Italy, especially Lazio and the town of Ariccia near Rome. It is sold from food trucks at markets and festivals and is usually served in thick slices in a crusty bread roll.
