About Caprese

Caprese, or Insalata Caprese, is a simple Italian salad of sliced ripe tomatoes, fresh mozzarella and basil leaves, seasoned with salt and dressed with olive oil.

It comes from the island of Capri, near Naples. Its red, white and green colors match the Italian flag.

The quality of the ingredients is everything, especially in summer when tomatoes are at their best. Buffalo mozzarella is often used, and some people add a drizzle of balsamic vinegar, though this is not traditional in Italy.
