About Gnocchi
Gnocchi are soft Italian dumplings, usually made from mashed potatoes mixed with flour and sometimes egg. They are shaped into small pieces, often rolled over a fork to create ridges that help hold the sauce.
They are boiled until they float, which only takes a minute or two. Good gnocchi should be light and tender, not heavy. They are served with tomato sauce, butter and sage, pesto or a cheese sauce.
Gnocchi were made long before potatoes came to Europe, using bread, flour or semolina. In Rome there is a saying: "Thursday is gnocchi day", and many restaurants still serve them on Thursdays.
