About Hyderabadi Biryani
Hyderabadi Biryani is a fragrant layered dish of basmati rice and marinated meat from Hyderabad in southern India. It is famous for its long-grain rice, saffron, fried onions, mint and the rich flavor of slow cooking.
In the most famous version, kacchi biryani, raw meat marinated in yogurt and spices is layered with partly cooked rice in a heavy pot. The pot is sealed with dough and cooked slowly on low heat (dum), so the meat and rice cook together in their own steam.
The dish developed in the kitchens of the Nizams, the rulers of Hyderabad, blending Mughal and local South Indian cooking. It is served with mirchi ka salan, a chili and peanut curry, and raita, and is a celebration dish at weddings and festivals.
