About Aloo Gobi
Aloo Gobi is a dry vegetable curry from northern India and Pakistan made with potatoes (aloo) and cauliflower (gobi). The vegetables are cooked with onion, garlic and ginger until tender and lightly browned, and turmeric gives the whole dish its warm yellow colour.
Cumin seeds sizzled in hot oil at the start, plus ground coriander, chili and garam masala, give it an earthy, fragrant flavor. Tomatoes are often added for a little moisture, but the finished dish is meant to be dry rather than saucy.
It is everyday home cooking in Punjabi kitchens and a favourite vegetarian choice in Indian restaurants worldwide. Aloo Gobi is typically eaten with roti, paratha or naan and a bowl of dal, and finished with a handful of fresh coriander leaves.
