About Cassoulet
Cassoulet is a rich, slow-cooked French casserole of white beans with pork, sausages and duck or goose confit. It comes from the Languedoc region of south-west France.
The dish is named after the cassole, the deep earthenware pot it is cooked in. It is baked slowly for hours, and a golden crust forms on top, which is traditionally broken and stirred back in several times.
Three towns, Castelnaudary, Carcassonne and Toulouse, each claim their own version. Cassoulet is a hearty winter dish, often served at gatherings with crusty bread and red wine.
