About Pastilla

Pastilla is an elaborate Moroccan pie that combines sweet and savory flavors. Thin layers of warqa pastry enclose a filling of spiced pigeon or chicken, eggs and almonds, and the top is dusted with powdered sugar and cinnamon.

The meat is slowly cooked with onions, saffron, ginger and cinnamon, and the cooking juices are thickened with eggs. A layer of fried almonds mixed with sugar and orange blossom water adds crunch and sweetness.

Pastilla is a dish for weddings and special occasions, and the city of Fes is especially famous for it. Seafood versions are also popular in coastal cities.
