Kefta
Morocco
Also known as Kofta, Kefta Tagine
About Kefta
Kefta is Moroccan spiced minced meat, usually beef, lamb or a mix of both, mixed with onion, parsley, coriander and spices such as cumin, paprika and cinnamon. It is shaped into balls or onto skewers and grilled, fried or simmered in sauce.
One of Morocco's best-loved dishes is kefta tagine: small meatballs cooked in a rich tomato sauce in a clay tagine, with eggs cracked on top at the end to cook in the sauce. It is eaten straight from the pot with bread.
Grilled kefta skewers are a popular street food in Moroccan markets. Similar spiced meatball and kebab dishes, called kofta or köfte, are eaten from India to the Balkans.
