About Okonomiyaki
Okonomiyaki is a Japanese savory pancake made from a batter of flour, eggs and dashi mixed with shredded cabbage, and cooked on a hot griddle with ingredients like pork belly, seafood or cheese.
The name means "grilled as you like it". It is topped with a sweet, thick okonomiyaki sauce, mayonnaise, dried seaweed flakes and bonito flakes, which move in the heat.
There are two main styles: Osaka style, where everything is mixed together, and Hiroshima style, where the ingredients are layered with noodles. Many restaurants let customers cook their own at the table.
